These Banana Oatmeal Cookies are hands down the best banana flavored cookie I've ever had. Not only are they really moist and chewy for days, they are unmistakably banana-y.

Banana may be one of these flavors that can get lost once you inhale with it. It can be really subtle flavor. It always bums me out if that happens, because I LOVE the taste of banana. And so does the hubs.

So when good brewed banana treats come along, we go a little mad for them.

These cookies make the list of banana items to go crazy for. With no doubt.

And they are so moist, they practically melt in your mouth. Plus, with both oats and banana inside them, they are basically healthy, correct? And ideal for breakfast!

Creating them is equally as easy as eating them.

You've got the usual suspects -- butter, brown sugar, white sugar, an egg, vanilla and mashed bananas. You begin by mixing all those beautiful components together.

I must warn you. The smell of that mixture -- using the banana -- is intoxicating. The hubs was at the kitchen which makes the dough together with me (we made a bargain that contained him with me) and we both had to work hard to not put our faces, or a straw, straight into it.

Then you add all of the ingredients (which usually means you simply use one bowl yay!) And mix it all together!

To bake them, spoon about a tablespoon of dough and create a thick disc, instead of a ball. They spread somewhat when baking, and thus don't place them too close together. Bake them for about 10-12 minutes for a nice, moist cookie. So yummy!

One other thing I really like about this recipe is where it came from.

My grandmother (my father's mom) passed away in 2008. Once I started baking a lot a couple of years ago, my uncle gave me her cookbook he'd had and didn't use. I have had it on my list to produce a number of her desserts ever since.

My dad and I left her gaufrettes (a French cookie -- my grandparents were French) a year or so past. It was a custom for my grandmother to make them every Christmas! She gave everyone a large tin of them, which was really a feat with 6 sons.

I now know just how much of a feat it had been! My goodness. She made them using a conventional gaufrette iron which goes over an open flame. My dad and I had them around the stove. They cook very quickly and you have to be precise. Too little time and they sort of disintegrated to iron. Overly long and they burned into the iron and we all had to wash it out.

My father was massaging the batter and taking away the cookies, I had been working the iron, the hubs was time things. It took many attempts to get it , but they had been so excellent! I have tried to create them on my own and it works. I'd really like to share the recipe, but the dang irons are so tough to find. And pricey. At some point, I would love to just earn a cookie cutter with the identical gaufrette taste.

For today though, I'm sharing these cookies. I really don't believe I had them made thembut they're from her novel.

It is such an enjoyable recipe book to look through, too. There are so many handwritten pages, clippings and newspaper recipes that were taped to the publication. I adore the way they used to compose recipes in the paper -- they'd the man who submitted it's name and cute little stories. It is so fun to browse ! What a different time on earth!

Anyways, I don't really know where this recipe came from. The newspaper appears like it was on a flier from their square dancing group or something (they were big to square dancing). It's undoubtedly from West Virginia, where they dwelt.



In any event, I am so happy to finally talk about a recipe from her book with you! I made a few adjustments to make them thicker and more puffier and they're delicious. There will be more to come from her recipe book, but for the time being like the banana.

Banana Oatmeal Cookies



Yield: 34-36 COOKIES


INGREDIENTS:



1 cup brown sugarpacked

1/2 cup check these guys out sugar

1 egg

1 teaspoon vanilla extract

1 cup mashed bananas

1 1/2 cups all purpose flour

1 1/2 tsp cinnamon

1 tsp baking soda

1/4 teaspoon ground cloves

2 tsp cornstarch



DIRECTIONS:

1. Mix together egg, brown sugar, egg, sugar, vanilla extract and mashed bananas until well blended.

2. Add flour, cinnamon, baking soda, cloves and cornstarch and blend until blended.

3. Stir in yogurt.

4. Preheat oven to 350 degrees.

5. Spoon tablespoons of dough onto a cookie sheet covered with parchment paper. Flatten dough just a little bitinto thick discs. They'll disperse a bit when baked.

6. Bake for 10-12 minutes or until edges just begin to golden.
